Here are some quick, healthy dinner ideas that I like to eat..
Chicken, Brown Rice, Avocado and Broccoli
So I just LOVE avocado. I eat it all the time. One of my favorite combinations is avocado and rice. I don't know the avocado just adds some creaminess to the rice that I can't resist. So, one of my favorite nutrient-dense meals is this! Basically grill up some chicken, boil up some brown rice, steam up some broccoli and throw in some avocado and mix it all together! I'm also addicted to hot sauce so I may or may not throw some of that in there as well.:) I recommend Success Boil-in-a-bag brown rice if you're in a rush, since brown rice takes so long to cook. I always have my meals prepped, so I basically have all these things in my fridge already cooked, and just throw them together. Avocados are a great healthy source of fat! For this I used about 1 cup rice, 2.5 oz chicken, 1 cup broccoli and about 60 g avocado. Macros: Fat 8.4 g Carbs: 33 g Protein: 20 g. When counting macros, I only count the main source. So, even though avocado does have some carbs and protein in it, it's mainly a fat source, so I only count it towards the fat.
Looking For a Way to Eat More Vegetables?
Throw in some spinach, broccoli, peppers, etc in with your eggs! I have eggs every morning for breakfast, but if you didn't prepare ahead of time for dinner, they are a great alternative that will keep you away from eating something unhealthy. Also pictured are carrots and almonds, two other great snacks that are good to keep on hand to prevent you from grabbing something worse.
Grilled Tuna Steak
I'm not much of a fish person, but I like to eat it once in a while to get in some good Omega-3 fatty acids into my diet. One of the ways I eat fish is tuna steak. To me, it taste like chicken, and doesn't really have that fishy smell when you cook it, so it's an easy way to get in some of those great nutrients from fish without gagging it down! Sided with it are green beans (fresh- not frozen!). I don't have any problem eating most frozen vegetables, but fresh are so much better- especially green beans. My green beans just have to be fresh. I also had some whole wheat pasta on the side- a very rare treat for me to have pasta.
Chicken Stir Fry
Slice up any veggies you want, or frozen if it's easier. I usually do a combination of both. Toss them in a pan and lightly sautee them. I usually cut up the chicken into small cubes and cook it in another pan, then add it to the veggies once it's done. Top with some soy sauce or serve over a bed of rice if you'd like!
