Sweet Potato Pancakes
These are super moist and delicious! Sweet potatoes are a great post-workout food as they are a complex carbohydrate which your body really needs to recover after working out.
Instructions:
Blend 1/2 cup oats (I use Bob's Red Mill- Gluten Free Old Fashioned), 4 egg whites, and 80 grams sweet potato. The batter will be THICK. I then added in some water to make the batter a little thinner, but almond milk would work as well.
Make Sure the oats are fully blended, you want this to be just like a pancake batter!
You can also add in some spices- stevia, vanilla, cinnamon, etc.
Pour the batter onto the griddle or pan on medium heat and cook until your preferred darkness!
These WILL be very moist in the middle! I topped with 1 tbsp of Justin's All Natural Peanut Butter.

Cinnamon French Toast
This is super easy! I took 2 slices of Ezekiel Sesame Bread, and dipped them in 2 eggs and 2 egg whites.
Plop them on a pan or griddle and added cinnamon on top when done. You can also add fresh berries on top like i did. So YUMMY! If you don't want to add any extra calories you can add Walden Farms Syrup for topping. Peanut butter would probably be good too!

Baked Sweet Potato and Apples
Looking for some carbs to reload after a workout? Sweet potatoes are one of my favorite foods as they are SO versatile! Pink Lady apples are my favorite, so i sliced up an apple and about 75 g of sweet potato, added a little cinnamon and set them in the toaster oven to bake at about 450 F. The thinner you slice the apples, the softer they'll get! It's really all about personal preference when you want to take them out of the oven, if you like your sweet potatoes crispy, leave them in a bit longer. It may sound weird, but they actually compliment each other really well. I recommend pre-cooking the sweet potato, you can do this by simply popping it in the microwave for about 5 minutes. I always have pre-cooked sweet potatoes in my fridge, so I just had to slice up the apple! Top with some cinnamon for extra flavor! :)

Baked Apple Oatmeal
So, I use oats for a lot of things. You can easily blend them up into a flour and use them for almost anything. To make this I took about half a cup of oats, and 1 apple. I precooked the oatmeal in the microwave for about 1 minute, just to allow the water to absorb and speed the process up a little. Then I sliced up the apple and mixed it in with the oatmeal. Sprinkle some cinnamon on top, then place in the oven with a dash of cinnamon on top. It should take about 10-15 minutes or so at 450 F. A great breakfast idea! Try it with strawberry's as well:)

Funfetti Protein Pancakes
Get ready for this! Funfetti cake is one of my personal favorites, so I was super excited when I found or-fetti protein powder by Cellucor. As you can tell I love breakfast foods, so after my workout one day I decided to make.. Yes... FUNFETTI PROTEIN PANCAKES! These babies had 25 g of protein!! I've done a lot of research on different ways to make healthy pancakes, and since there was already going to be protein from the protein powder, I wanted to use that as my egg white substitute. I've heard of other people using almond milk instead of egg whites, so I decided to try that. So, I used one scoop of Cor-fetti protein powder, about 3/4 cup oats and 1/4 cup almond milk. I blended it all together, and then found the batter to still be really thick. So, I added a little water since I had already put almond milk in there. Anyways, these came out delicious, like hands down top 5 of my creations. Go try them! Look, you can even see the blue and pink funfetti pieces!
